PAV BHAJI FRANKIE - Our love for street food is incomparable. Jab itne varieties hon, to kaise man bharega!! Here's a unique chaat recipe that brings together 2 favourites - Pav Bhaji and Frankie.

Ingredients

For Boiling Vegetables

  • 1 medium Cauliflower, florets,
  • 2 medium Potato, cubed,
  • 2 medium Carrot (peeled, cubed)
  • ⅓ cup fresh Green peas,
  • 3-4 tbsp Butter, cubed,
  • Salt to taste,
  • Water,

For Pav Bhaji

  • 1 ½ tbsp Butter,
  • 1 tbsp Oil,
  • 1 medium Onion, chopped,
  • 1 tsp Ginger Garlic paste,
  • 1 tsp Degi red chili powder,
  • 1 medium Tomatoes, chopped,
  • Salt to taste,
  • 2 Green chillies (less spicy & chopped)
  • 1 ½ tbsp Pav bhaji masala,
  • Boiled Vegetables,
  • 1 tsp Pav bhaji masala,
  • 1 large Capsicum, roughly chopped,
  • 1 large Tomato, roughly chopped,
  • 1 tbsp Butter, cubed,
  • 1 tbsp Coriander leaves, roughly chopped,

For Dough

  • 1 ½ cup Refined flour,
  • 1 tsp Oil,
  • Water as required,
  • ½ tsp Oil (after kneading)

For Roasting Roti

  • 1-2 tsp Oil,
  • 1 tsp Butter, cubed,

For Salad

  • ½ Onion, chopped,
  • 1 Green chillies (less spicy & chopped)
  • 1 tbsp Coriander leaves, chopped,
  • 1 tsp Lemon juice,
  • Salt to taste,

For Assembling

  • 1 half Cooked Roti,
  • Pav bhaji Filling,
  • Processed cheese, grated,
  • Prepared Salad,
  • A pinch of pav bhaji masala,

For Garnish

  • Coriander sprig

Process

For Boiling Vegetables

  1. In a pressure cooker, add cauliflower, potato, carrot, green peas, butter, salt to taste, water and mix well.
  2. Cover it with a lid and cook for 2 to 3 whistles.
  3. Once the vegetables are cooked well. Mash the vegetables with the help of a masher and keep it aside for further use.

For Tempering

  1. In a shallow pan, add butter, oil, once it's hot, add onions and saute well.
  2. Add ginger garlic paste and saute, add degi red chili powder and saute well.
  3. Add tomato, salt to taste and cook it for 1-2 minutes on moderate heat.
  4. Add green chili, pav bhaji masala and saute it.
  5. Add prepared boiled vegetables and mix well.
  6. Add pav bhaji masala, capsicum, tomato and mix it well.
  7. Once pav bhaji is cooked well, add butter and stir.
  8. Add coriander leaves and cook it for 3-4 minutes on moderate heat.

For Dough

  1. In a bowl or parat, add refined flour, oil, water as required and knead it well.
  2. Make a smooth semi soft dough, apply oil onto it and cover it with the muslin cloth. Let it rest for 10-15minutes.
  3. Divide the dough into small lemon size balls, make flat roti with the help of a rolling pin.
  4. Keep it aside for further use.

For Roasting Roti

  1. In a flat pan, add oil, once it’s hot, place roti on it and roast upto 50% on both the sides.
  2. Transfer it to a plate and keep it for further use.

For Salad

  1. In a bowl, add onion, green chillies, coriander leaves, lemon juice, salt to taste and mix everything well.
  2. Keep it aside for further use.

For Assembling

  1. In a pan, add butter, once it’s melted, place roti and cook it on both sides.
  2. Transfer it onto a plate or platter.
  3. Place the prepared pav bhaji filling on the roti, add prepared salad, grated cheese, sprinkle pav bhaji masala and roll it.
  4. Serve it on a serving platter, garnish it with coriander sprig.
  5. Serve hot.
