Zucchini flan


  • 2 medium zucchinis;
  • 100 ml (⅓ cup+1 tbsp) milk;
  • 4 eggs;
  • 150 g (¾ cup) sharp cheese, shredded;
  • 2 garlic cloves, minced;
  • 15 g (2 tbsp) scallions;
  • 15 ml (1 tbsp) olive oil;
  • Salt and pepper.


  1. Grease a 20x20cm square baking pan. Preheat the oven to 180C/350F.
  2. Cut zucchini into cubes.
  3. Heat the pan with some olive oil and cook zucchini with some salt and pepper for around 5 minutes. Add garlic and scallions, and cook for 30 more seconds. Transfer into a medium-sized bowl.
  4. Whisk 4 eggs with milk, a pinch of salt, and pepper. Pour eggs over zucchinis and mix in ¾ of shredded cheese. Transfer into a prepared baking pan and top with leftover cheese.
  5. Cook for 40 minutes, and leave to cool down slightly before slicing and serving.
