No-bake lemon cake

You only need a few ingredients to make a delicious lemon dessert!

INGREDIENTS

  • 45ml (3 tbsp) lemon juice;
  • 120ml (Β½ cup) water;
  • 60ml (ΒΌ cup) dry white wine;
  • 15g (1 tbsp) sugar;
  • Ladyfingers;
  • 500ml (2 cups) milk;
  • 45g (β…“ cup) cornstarch;
  • 3 eggs;
  • 45g (3 tbsp) sugar;
  • 1 lemon, zest.

METHOD

  1. Whisk lemon juice with water, wine, and sugar. Dip ladyfinger biscuits in the mix for a second and place into a round 20 cm pan, covering both bottom and sides.
  2. Whisk cornstarch, sugar, eggs, and lemon zest together. Pour hot milk in. Pour custard base into a medium pot and place on medium-low heat. Cook, while whisking constantly for around 10 minutes or until it thickens.
  3. Pour lemon custard into the pan and top with more ladyfinger biscuits dipped in lemon juice syrup.
  4. Let the cake sit in the fridge for around 6 hours or until fully set. Dust with powdered sugar before serving.
