Peach fluffy cake

INGREDIENTS

  • 2 eggs;
  • 100g (½ cup) sugar;
  • ¼ tsp vanilla extract;
  • 100ml (⅓ cup+1 tbsp) vegetable oil;
  • 100ml (⅓ cup+1 tbsp) milk;
  • 250g (2 cups) of all-purpose flour;
  • 12g (3 tsp) baking powder;
  • a pinch of salt;
  • 160g (⅔ cup) pastry cream;
  • 2 medium peaches, pitted and sliced in half.

METHOD

  1. Preheat the oven to 180°C/350°F. Cover a 20 cm round baking pan with parchment.
  2. Cut peaches into medium slices.
  3. Whisk sugar and vanilla with eggs until pale. Add vegetable oil and milk, and whisk until combined.
  4. In a large bowl combine flour with baking powder and salt.
  5. Whisk egg mixture with flour until thick batter forms.
  6. Transfer the batter to a prepared pan, and smooth the top of the cake.
  7. Pipe a spiral on top of the cake, then layer peaches following the line of the pastry cream.
  8. Bake for 50 minutes and serve dusted with powdered sugar.
