Diabetic Coconut Cake
New Orleans native Charlie Andrews demonstrates how to make a diabetic Coconut cake. The batter consists of Almond flour, leavening, eggs, a sweetener that is diabetic friendly, light sour cream, flavorings like vanilla, butter and coconut extract, and unsweetened coconut milk. After the cake is baked, it's topped with a butter vanilla coconut meringue frosting and unsweetened coconut flakes. This recipe calls for 15 to 20 servings, and it is delicious.
