Pumpkin meatballs
INGREDIENTS
- 500g of butternut squash
- Salt
- Extra virgin olive oil
- 100g (3/4 cup) of breadcrumbs
- 100g (1 cup) of parmesan cheese
- 1 egg
- Sage Pepper Cheese
- Oil for frying
METHOD
- Cut the pumpkin into slices and transfer them to a baking tray covered with parchment paper. Season with a drizzle of oil and a pinch of salt and bake in the oven at 200°C/392°F for 30 minutes.
- Transfer the pumpkin slices into the bowl and smash them with the fork. Add the breadcrumbs, parmesan, egg, sage, and pepper, and mix until all is well combined.
- Form the balls (about 40 grams) and add the cheese to each one. Pass them to the breadcrumbs.
- Fry the pumpkin meatballs in the hot oil until they are golden brown.
