Pumpkin meatballs

INGREDIENTS

  • 500g of butternut squash
  • Salt
  • Extra virgin olive oil
  • 100g (3/4 cup) of breadcrumbs
  • 100g (1 cup) of parmesan cheese
  • 1 egg
  • Sage Pepper Cheese
  • Oil for frying

METHOD

  1. Cut the pumpkin into slices and transfer them to a baking tray covered with parchment paper. Season with a drizzle of oil and a pinch of salt and bake in the oven at 200°C/392°F for 30 minutes.
  2. Transfer the pumpkin slices into the bowl and smash them with the fork. Add the breadcrumbs, parmesan, egg, sage, and pepper, and mix until all is well combined.
  3. Form the balls (about 40 grams) and add the cheese to each one. Pass them to the breadcrumbs.
  4. Fry the pumpkin meatballs in the hot oil until they are golden brown.
