Chocolate Fudge Cake

Ingredients
for 1 serving

¼ cup flour (30 g)
2 tablespoons cocoa powder
¼ cup granulated sugar (50 g)
¼ teaspoon baking powder
1 pinch of salt
¼ teaspoon vanilla
1 egg
3 tablespoons canola oil
powdered sugar, for serving
fresh berries, optional, for serving

Preparation

Under 30 min

  1. In a medium bowl, whisk the flour, cocoa powder, granulated sugar, baking powder, salt, vanilla, egg, and oil until smooth.
  2. Add the chocolate cake batter to a mini frying pan over low heat, and spread to smooth the top.
  3. Cover with a small plate and cook for 30 minutes, or until the cake is set.
  4. Serve with powdered sugar and berries (optional).

Ingredients
for 1 serving

1 tablespoon olive oil
5 oz pizza dough (140 g)
2 tablespoons marinara sauce
¼ cup shredded mozzarella cheese (25 g)
3 pieces pepperoni

Preparation
Under 30 min

  1. Heat the oil in a mini frying pan over low heat.
  2. Place the pizza dough in the pan and let brown, 3-5 minutes.
  3. Flip the dough and use a spatula to press the dough against the bottom of the pan and up the sides.
  4. Spread marinara sauce in the center of the dough and top with mozzarella cheese and pepperoni.
  5. Cook for 10 minutes, until the dough is crispy and cheese is melted.
  6. Enjoy!

 

Berry Cobbler For One

Ingredients
for 1 serving

¼ cup flour (30 g)
¼ teaspoon baking powder
2 tablespoons sugar, divided
1 tablespoon butter, cold, cubed
2 tablespoons milk
1 cup mixed berries, fresh or frozen (150 g)
1 tablespoon water

Preparation
Under 30 min

  1. In a medium bowl, add the flour, baking powder, 1 tablespoon of sugar, and the butter.
  2. Cut the butter into the flour with a fork until the mixture crumbly.
  3. Add the milk and stir until the mixture comes together.
  4. Heat the mini frying pan over low heat.
  5. Add the berries, water, and remaining tablespoon of sugar to the frying pan.
  6. Scoop the dough on top of the berries, flatten slightly with a spoon, and cover with a small plate.
  7. Cook for 30 minutes or until the berries have softened and the dough is cooked through.

Ingredients

2 large eggs
⅓ cup broccoli, finely chopped (50 g)
⅓ cup shredded cheddar cheese (35 g)
salt, to taste
pepper, to taste
½ teaspoon garlic powder
chives, sliced, for garnish

Preparation
Under 30 min

  1. In a medium bowl, beat the eggs.
  2. Add the broccoli, cheddar cheese, salt, pepper, and garlic powder and beat to combine.
  3. Heat the mini frying pan over medium heat.
  4. Pour the egg mixture into the pan and cover with a small plate.
  5. Cook for 10 minutes, or until the egg is set.
  6. Transfer to a plate and top with sliced chives.
