Savory brioche flowers
INGREDIENTS
- 4g (1 tsp) of dry yeast
- 3g (1/2 tsp) of salt
- 200ml (3/4 cup) of milk
- 4 egg yolks 400g (3 1/4 cups) of all-purpose flour
- Olive oil
- Hot dog sausage
- Egg white for brushing
- Parmesan cheese
METHOD
- In a bowl add the yeast, salt, milk, and egg yolks and mix. Add the flour and mix until all is well combined and the dough is obtained. Knead the dough with your hands until smooth.
- Cut the dough into 7-8 pieces and roll out each piece. Prick the rolled dough with the glass creating 7-8 circles.
- Add each circle on top of the glass by overlapping each other. Turn the glass upside down to create the flower shape.
- Add a piece of hot dog sausage to each flower. Transfer them to the baking tray covered with parchment paper and brush with egg white and sprinkle with parmesan cheese.
- Cover the brioche flowers with the cling film and let them rise for 40 minutes or until they are doubled in volume.
- After time has elapsed transfer them to the oven and bake at 180°C/360°F for 25 minutes.
