Mushroom Lasagne
Mushroom lasagne is a delicious vegetarian version of the classic Italian dish. It is made by layering cooked lasagne noodles with a creamy mushroom and spinach filling, tomato sauce, and mozzarella cheese. Here's a recipe for mushroom lasagne:
Ingredients:
- 9 lasagne noodles
- 4 cups sliced mushrooms
- 1 cup chopped spinach
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup all-purpose flour
- 3 cups milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 2 cups tomato sauce
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the lasagne noodles in a large pot of boiling salted water until al dente, according to package instructions. Drain and set aside.
3. In a large skillet, heat the olive oil over medium heat. Add the garlic and cook for 1 minute, until fragrant.
4. Add the sliced mushrooms and cook for 5-7 minutes, until they release their liquid and start to brown.
5. Add the chopped spinach and cook for 1-2 minutes, until wilted.
6. Sprinkle the flour over the mushroom and spinach mixture and stir well to coat.
7. Gradually add the milk, whisking constantly to prevent lumps from forming. Bring the mixture to a simmer and cook for 5-7 minutes, until thickened.
8. Stir in the Parmesan cheese, salt, and pepper.
9. To assemble the lasagne, spread a thin layer of tomato sauce on the bottom of a 9x13 inch baking dish. Place 3 lasagne noodles on top of the sauce.
10. Spread half of the mushroom and spinach mixture over the noodles, followed by half of the remaining tomato sauce and half of the shredded mozzarella cheese.
11. Repeat the layers, starting with the lasagne noodles and ending with the mozzarella cheese.
12. Cover the lasagne with foil and bake for 25 minutes.
13. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
14. Let the lasagne cool for a few minutes before slicing and serving. Enjoy!
