Cheese eggplants
INGREDIENTS
- 2 eggplants
- 30ml (1/4 cup) of olive oil
- Salt
- Pepper
- Garlic powder
- Sweet paprika
- Dry oregano
- 150g of mozzarella
METHOD
- Cut the eggplants in half and start making the cuts inside of them to create the small squares.
- Meantime prepare the mixture for brushing by mixing the olive oil, salt, pepper, garlic powder, sweet paprika, and dry oregano. Brush the middle part of each eggplant well.
- Transfer the eggplants to the baking tray covered with parchment paper and turn them upside down. Pour the olive oil on top and transfer to the oven at 180°C/360°F for 40 minutes.
- After the first bake fills the middle part of the eggplants with the mozzarella. Transfer to the oven and bake 180°C/360°F for 15 more minutes and serve.
