Coconut cookies
INGREDIENTS
- 1 egg
- 8g of vanilla sugar
- 80g (1/2 cup) of sugar
- 50g (1/2 cup) of corn starch
- 100ml (1/2 cup) of seed oil Lemon (zest)
- 200g (1 1/2 cups) of flour
- 4g (1/2 tbsp) of baking powder
- White chocolate (melted)
- Grated coconut
METHOD
- In a bowl add the egg, vanilla sugar, and sugar and whisk until sugar dissolves. Add the corn starch, seed oil, lemon (zest), flour, and baking powder, and mix everything well until the dough obtained
- Knead the dough with your hands until smooth. Split the dough into 5 equal pieces and roll each piece into a stick shape.
- Cut the stick in the half and prick with the fork to create the shape. Cut each part where is the shape.
- Transfer the cookies to the baking tray covered with parchment paper and bake in the oven at 180°C/360°F for 15 minutes.
- After time has elapsed dip the top and bottom side first in white chocolate (melted) and then cover with coconut and serve.
