Soft apple cookies
INGREDIENTS
- 1 apple
- 60g (1/4 cup) of sugar
- 60g (1/4 cup) of butter (soft)
- 1 egg
- 100g (3/4 cup) of flour 00
- 50g (1/2 cup) of potato starch
- 5g (1 tsp) of baking powder
- Cinnamon
- 40g (1/4 cup) of chocolate chips + more for sprinkling
- Powdered sugar
METHOD
- In a bowl add the sugar and butter and mix with an electric mixer until is creamy. Add the egg and continue to whip everything until the mixture is frothy and well bound.
- Add the flour, potato starch, baking powder, and cinnamon, and continue mixing.
- Peel the apple, cut it into small cubes and add it to the mixture.
- Add the chocolate chips and mix everything with the spatula, turning from bottom to top.
- Add the mixture with the apples with the help of two spoons on the baking tray covered with parchment paper. Finish by garnishing the surface of the apple cookies with a few more drops of chocolate.
- Transfer the cookies into the oven and bake at 180°C/360°F for 25 minutes. Decorate with powdered sugar and serve.
