Zucchini omelette

INGREDIENTS
- 700g of zucchini
- Salt
- Pepper
- 1/2 tbsp of minced garlic
- Dry oregano
- 3 eggs
- 30g (1/4 cup) of flour
- 1 tomato
- 90g of mozzarella
METHOD
- Grate the zucchini and transfer it to the bowl. Add the salt, pepper, minced garlic, oregano, eggs, flour and mix well together.
- Pour the mixture into the pan and level it up with the spatula. Cover with lid and cook for 6 minutes on low heat.
- After 6 minutes turn to the other side and start arranging tomato slices and mozzarella cheese on top of them. Cover with lid and cook 3 more minutes or until the mozzarella is melted and serve.
