Zucchini omelette


  • 700g of zucchini
  • Salt
  • Pepper
  • 1/2 tbsp of minced garlic
  • Dry oregano
  • 3 eggs
  • 30g (1/4 cup) of flour
  • 1 tomato
  • 90g of mozzarella


  1. Grate the zucchini and transfer it to the bowl. Add the salt, pepper, minced garlic, oregano, eggs, flour and mix well together.
  2. Pour the mixture into the pan and level it up with the spatula. Cover with lid and cook for 6 minutes on low heat.
  3. After 6 minutes turn to the other side and start arranging tomato slices and mozzarella cheese on top of them. Cover with lid and cook 3 more minutes or until the mozzarella is melted and serve.
