Queen Elizabeths pancakes

INGREDIENTS

  • 2 eggs
  • 50g (4 tbsp) of caster sugar
  • 350ml (2 teacups) of milk
  • 470g (4 teacups) of all-purpose flour
  • 2g (1/4 tsp) of salt
  • 10g (2 tsp) of baking soda
  • 15g (3 tsp) of cream of tartar
  • 30g (2 tbsp) of butter (melted)
  • Powdered sugar for decoration

METHOD

  1. In a bowl add the eggs, sugar, and part of the milk and whisk until the sugar dissolves.
  2. Sift the flour and continue whisking adding the rest of the milk. Add the salt, baking soda, cream of tartar, and butter (melted) and mix all well together.
  3. Heat a pan with some melted butter in it and pour in the batter with the ladle or
  4. with the measuring cup. When the batter is bubbling on top, flip over to cook on another side.
  5. Decorate with powdered sugar.
