Donne Biryani Ingredients :
Preparation of Ginger-Garlic & Onion Paste
- 1 tbsp Oil
- 10 Black Peppercorns
- 2-inch Ginger (chopped)
- 8 Garlic Cloves (chopped)
- 5 Green Chillies (chopped)
- 2 Onions (chopped)
Preparation of Coriander & Mint Paste
- 1 tbsp Oil
- 1 cup Fenugreek Leaves
- 1/2 cup Mint Leaves
- 1 cup Coriander Leaves
Marinating the Chicken
- 800 gms Chicken (curry cut)
- 1 tsp Garlic Paste
- 1 tsp Ginger Paste
- 1 tsp Turmeric Powder
- 2 tsp Red Chilli Powder
- 200 gms Yogurt
- Salt (as required)
Preparing the Biryani
- 2 tbsp Oil
- 2 tbsp Ghee
- 1 tsp Cumin Seeds
- 1 tsp Fennel Seeds
- 1-inch Cinnamon Stick
- 1 Star Anise
- 2 Marathi Moggu (Kapok Buds)
- 1 blade Mace
- 5 Green Cardamom Pods
- 7 Cloves
- 1 tsp Stone Flower
- 1 Onion (chopped)
- 1/2 tsp Turmeric Powder
- 1 tbsp Coriander Seeds Powder
- 2 tsp Garam Masala Powder
- 3 cups Short Grain Rice (soaked in water)
- 5 cups Water
- Salt (as required)
- 1 tsp Lemon Juice
