Zucchini pockets


  • 2 zucchini Olive oil
  • 1 clove of garlic
  • Pepper
  • Salt
  • 3 boiled potatoes
  • 1 egg
  • 300g (2 1/2 cups) of flour
  • 40g of cheese


  1. Grate zucchini and set them aside. Pour the olive oil into the pan and add the clove of garlic.
  2. Add the prepared zucchini, season them with salt and pepper and fry until soft.
  3. Add the boiled potatoes to the bowl and mash them. Add the egg and flour and mix until the dough is obtained. Knead the dough with your hands until all is well combined.
  4. Split the dough into 8 equal pieces. Press each piece with your hands to flatten it. Add the prepared zucchini on one side and cheese on top.
  5. Close it and press it with your hands. At the end prick with the fork to close it well.
  6. Pour the olive oil into the pan and transfer the zucchini pockets. Fry on both sides until they are golden brown.
