Peanut butter truffles

INGREDIENTS

For the cookies:

  • 90g of Biscuits
  • 250g (2 1/4 cups) of Icing sugar
  • 120g (1/2 cup) of Butter (melted)
  • 230g (1 cup) of Peanut butter

For the chocolate coating:

  • 200g (1 1/4 cups) of Chocolate chips
  • 50g (1/4 cup) of Peanut butter
  • Salt

METHOD

  1. In a bowl add the biscuits, icing sugar, and butter and mix all together well. Add the peanut butter and mix again until the mixture is compact.
  2. Create the balls from the mixture and transfer them to the plate. Move to the freezer for 20 minutes.
  3. In a bowl add the chocolate chips and peanut butter. Transfer to the microwave for 2 minutes.
  4. Remove the balls from the freezer and deep each ball into the chocolate mixture to cover them.
  5. Transfer the truffles to the plate and sprinkle each one with salt.
