Crispy accordion potatoes

INGREDIENTS
- 3 potatoes
- Salt
- Olive oil
- Paprika
- 1 clove of garlic
- Pepper
- Lemon (zest)
METHOD
- Peel the potatoes. Then, cut the ends of the potatoes. Place the potato horizontally. Place the skewer on both sides of the potato and cut vertical lines.
- Flip the potato over and cut diagonal lines.
- In a pot with water pour the salt and boil the potatoes for a few minutes.
- In a small bowl pour the olive oil, add the paprika, garlic, pepper, and zest and mix to prepare the mixture for brushing.
- Transfer the potatoes to the baking tray covered with parchment paper and brush them on both sides with the prepared mixture.
- Transfer to the oven and bake at 180°C/360°F for 35 minutes or until they are golden brown.
- Cut the rest of the potatoes into the cube and transfer them to the baking tray covered with parchment paper. Pour the olive oil over them and season with salt and pepper. Transfer to the oven and bake at 180°C/360°F for 30 minutes.
