Pumpkin parmesan

INGREDIENTS

  • 1kg of pumpkin
  • Flour Extra virgin olive oil
  • Parmesan cheese
  • Speck slices
  • Mozzarella
  • Salt
  • Pepper
  • Breadcrumbs
  • Thyme

METHOD

  1. Clean the pumpkin from the seeds, remove the skin and cut it with a knife into thin slices (maximum 5 mm). Flour them lightly.
  2. Brush a baking tray (20x30cm - tray size) with a little oil, make a layer of pumpkin, sprinkle with parmesan, speck slices, sliced mozzarella, a drizzle of oil, and a pinch of salt.
  3. Proceed in this way until finished all the ingredients. Finish with slices of pumpkin, salt, pepper, breadcrumbs, and parmesan, flavored with thyme a drizzle with oil.
  4. Bake in a preheated oven at 200°C/392°F for 40 minutes. Let it cool and serve.
