Eggs in purgatory with eggplants

INGREDIENTS
- 2 eggplants
- Olive oil
- 1 onion
- 1/2 of pepper
- 7 cherry tomatoes
- 250ml (1 cup) of tomato sauce
- Salt
- Pepper
- Herbs
- 2 cloves of garlic
- 4 eggs
- Cheese
METHOD
- Cut the eggplants into small cubes and fry them in a pan with a drizzle of oil until soft.
- In a pan fry the onion with the pepper and then add the cherry tomatoes, tomato sauce, salt, pepper, herbs, and garlic and cook for a few minutes.
- Add the eggs on top and add the cheese on top. Cover with a lid and cook for about 5 minutes or until the eggs are done.
- Remove from the pot and serve.
