Eggs in purgatory with eggplants

INGREDIENTS

  • 2 eggplants
  • Olive oil
  • 1 onion
  • 1/2 of pepper
  • 7 cherry tomatoes
  • 250ml (1 cup) of tomato sauce
  • Salt
  • Pepper
  • Herbs
  • 2 cloves of garlic
  • 4 eggs
  • Cheese

METHOD

  1. Cut the eggplants into small cubes and fry them in a pan with a drizzle of oil until soft.
  2. In a pan fry the onion with the pepper and then add the cherry tomatoes, tomato sauce, salt, pepper, herbs, and garlic and cook for a few minutes.
  3. Add the eggs on top and add the cheese on top. Cover with a lid and cook for about 5 minutes or until the eggs are done.
  4. Remove from the pot and serve.
