Bean cake
INGREDIENTS
- 450g (3 cups) beans
- 3 eggs
- 50ml olive oil
- 100g yogurt
- Salt
- Hot red pepper
- Mint
- 150g feta cheese
- Parsley
- 100g cornmeal
- 10g baking powder
- Butter
- Sesame
METHOD
- Pour the beans into a strainer and pat dry.
- Place them in a bowl, add eggs, and olive oil, and blend well.
- Add yogurt, salt, hot red pepper, mint, and feta cheese, and mix well.
- Add parsley, cornmeal, and baking powder and mix again.
- Grease a baking tray with butter, sprinkle over sesame seeds, and pour in the mixture.
- Bake for 40 minutes at 170°C (338°F).
