Black forest cake

INGREDIENTS

For the base:

  • 150g of dark chocolate
  • 140g (1/2 cup) of butter
  • 6 eggs
  • 160g (3/4 cup) of sugar
  • 120g (1 cup) of flour
  • 8g (1/2 tbsp) of baking powder

For the brushing:

  • 270g (1 cup) of cherries syrup
  • 40g (1/4 cup) of water

For the filling and covering:

  • 1l (4 1/4 cups) of whipping cream
  • 110g (1/2 cup) of sugar

For decoration:

  • Cherries in syrup
  • Dark chocolate

METHOD

  1. Combine the dark chocolate and butter and transfer to the microwave for 2 minutes. Mix well to mix, then leave aside to cool.
  2. Separate yolks and egg whites. Whip the egg yolks with the sugar until obtain a creamy mixture. Then add the butter and chocolate mixture and mix.
  3. Incorporate, sift, the flour and baking powder, and mix using a spatula.
  4. Beat the egg whites until stiff and add them little by little, stirring gently.
  5. Pour the mixture into the cake mold (22cm - mold size), transfer to the oven, and bake at 180°C/360°F for 40 minutes. Let it cool completely.
  6. Pour the whipping cream into the bowl, add the sugar and whip the cream with the electric mixer.
  7. In a small bowl pour the cherries syrup and water and mix.
  8. Using a serrated knife, cut the chocolate base into 3 discs of equal thickness and place the first one on the serving dish and brush with prepared syrup.
  9. Start adding the whipped cream on top, add some cherries on top and cover with another disc of chocolate. Repeat the process with the cream and cherries and finally close with the third disc.
  10. Also, brush the upper surface and press lightly so as to internally level the layers. Cover the cake with a layer of cream.
  11. Decorate the edges with the chopped chocolate, making it adhere to the cream.
  12. Decorate the top with tufts of cream, black cherries, and chopped chocolate.
