Chocolate fluffy brioche

INGREDIENTS

  • 200ml (¾ cup) warm milk;
  • 60g (½ cup) sugar;
  • 4g (½ tsp) salt;
  • 50g (4 tbsp) butter;
  • 2 eggs;
  • 7g (1 tbsp) dry yeast;
  • 500g (4 cups) all-purpose flour;
  • 12 pieces of dark chocolate;
  • Chocolate chips;
  • Egg wash.

METHOD

  1. Whisk warm milk with sugar, eggs, salt, and melted butter.
  2. In a separate bowl whisk flour with dry yeast.
  3. Add dry ingredients into the bowl of liquids and knead to make a smooth, slightly sticky dough.
  4. Form the dough into a ball and place it into an oiled bowl. Cover with plastic wrap and set aside for 1 hour.
  5. Divide the dough into 12 portions and roll each into a ball. Set aside for 30 minutes.
  6. Using your palm, flatten the dough into a disk, place a piece of chocolate in the middle and pinch the edges together to form a bun.
  7. Place 12 buns into a 20x20 cm square baking pan, then set aside for 30 minutes.
  8. Brush buns with egg wash and sprinkle chocolate chips on top.
  9. Bake for 20 minutes at 180°C/350°F.
