Zucchini tortillas
INGREDIENTS
- 700g of zucchini
- Salt
- Sweet paprika
- Garlic powder
- Dry oregano
- 50g (1/2 cup) of breadcrumbs
- 40g (1/2 cup) of parmesan cheese
- 2 eggs
- 90g (1 cup) of cheese
METHOD
- Grate the zucchini and transfer them to the bowl.
- Add the salt, sweet paprika, garlic powder, dry oregano, breadcrumbs, parmesan cheese, eggs, and cheese, and mix all well together to obtain the compact mixture.
- Cover the baking tray with parchment paper and pour for about 2 full spoons to obtain 4 piles. Flatten each one to obtain the tortillas.
- Transfer to the oven and bake at 180°C/360°F for 20 minutes.
