Potato and rice patties
How to cook Potato and rice patties:

INGREDIENTS
- 300 g (1 ½ cups) cooked rice;
- 3 medium potatoes, boiled, peeled;
- 1 onion, chopped;
- 1 carrot, grated;
- 45 ml (3 tbsp) vegetable oil;
- 2 garlic cloves, minced;
- 5 g (2 tbsp) parsley, chopped;
- 2 eggs;
- 200 ml (¾ cup) buttermilk;
- ½ tsp baking soda;
- 150 g (1 cup) all-purpose flour;
- salt and pepper.
METHOD
- Start with heating up vegetable oil over medium heat. Cook carrots and onions for 10 minutes.
- MIx cooked vegetables with rice and mashed potatoes, add garlic and parsley. Mix to combine and form patties.
- Whisk eggs with buttermilk, salt, pepper, flour and baking soda. Use a fork to dip patties into the batter.
- Fry potato-rice patties in preheated oil over medium heat for around 3 minutes per side.
