Potato and rice patties

INGREDIENTS

  • 300 g (1 ½ cups) cooked rice;
  • 3 medium potatoes, boiled, peeled;
  • 1 onion, chopped;
  • 1 carrot, grated;
  • 45 ml (3 tbsp) vegetable oil;
  • 2 garlic cloves, minced;
  • 5 g (2 tbsp) parsley, chopped;
  • 2 eggs;
  • 200 ml (¾ cup) buttermilk;
  • ½ tsp baking soda;
  • 150 g (1 cup) all-purpose flour;
  • salt and pepper.

METHOD

  1. Start with heating up vegetable oil over medium heat. Cook carrots and onions for 10 minutes.
  2. MIx cooked vegetables with rice and mashed potatoes, add garlic and parsley. Mix to combine and form patties.
  3. Whisk eggs with buttermilk, salt, pepper, flour and baking soda. Use a fork to dip patties into the batter.
  4. Fry potato-rice patties in preheated oil over medium heat for around 3 minutes per side.
