Potato roll in puff pastry


  • 4 medium potatoes;
  • 5g (2 tbsp) parsley;
  • 60g (¼ cup) shredded parmesan;
  • salt and pepper to taste;
  • 1 sheet puff pastry;
  • 9 slices ham;
  • 100g (½ cup) shredded mozzarella;
  • Egg wash.


1. Cook unpeeled potatoes until soft. Let them cool down, peel them, and mash them.

2. Combine mashed potatoes with parsley, parmesan, salt, and pepper.

3. Roll out puff pastry on a floured cutting board. Fill about ⅔ of the pastry with mashed potatoes and even the layer out with a spoon.

4. Place sliced ham and shredded cheese on top of the potato layer. Brush the free edges of the pastry with egg wash, roll and secure both edges to cover the filling completely.

5. Place potato roll into a loaf pan, brush with remaining egg wash, and score with a knife forming a criss-cross pattern.

6. Bake at 180°C/350°F for 35 minutes.
