INGREDIENTS

  • 2 eggplants
  • 2 eggs
  • 70g (1/2 cup) flour
  • 1/2 tsp salt
  • 1/3 tsp pepper
  • Breadcrumbs
  • Oil spray
  • Oil for frying
  • Ketchup

METHOD

  1. In a bowl mix together eggs with salt, pepper, and flour.
  2. Clean and cut the eggplants, dip them into the egg mixture, and then into breadcrumbs.
  3. Bake at 180°C (350°F) for 20 minutes.
  4. Fry the second eggplant until golden brown.
