Eggplant dishes
INGREDIENTS
- 2 eggplants
- 2 eggs
- 70g (1/2 cup) flour
- 1/2 tsp salt
- 1/3 tsp pepper
- Breadcrumbs
- Oil spray
- Oil for frying
- Ketchup
METHOD
- In a bowl mix together eggs with salt, pepper, and flour.
- Clean and cut the eggplants, dip them into the egg mixture, and then into breadcrumbs.
- Bake at 180°C (350°F) for 20 minutes.
- Fry the second eggplant until golden brown.
