Ponzu Sauce for Shabu Shabu, Sushi, & Salad

Ponzu sauce is a light and refreshing Japanese citrus sauce. In this homemade ponzu recipe, I'm going to show you how to make two types of citrus soy sauce, one with yuzu and another with a medley of citrus fruit, including mandarin, lemon, and grapefruit. It's easy to make at home and has many uses, such as a dipping sauce for sushi and shabu shabu, as well as a salad dressing.

CITRUS PONZU INGREDIENTS

  • 1 mandarin (zest)
  • 8 tablespoons soy sauce
  • 4 tablespoons mandarin juice
  • 2 tablespoons lemon juice
  • 2 tablespoons grapefruit juice
  • 4 grams konbu or 1/2 teaspoon konbucha granules

YUZU PONZU INGREDIENTS

  • 8 tablespoons yuzu juice
  • 8 tablespoons soy sauce
  • 2 tablespoons sugar
  • 4 grams konbu or 1/2 teaspoon konbucha granule
