I want to celebrate one of the unsung heroes of the kitchen with this incredible curry recipe.... the microwave! Not only is this fast and cheap to make it's also incredibly nutritious with all 5 of your fruit and veg portions - it's a delicious mid week supper for two.

Microwave Veggie Curry is a quick and easy recipe that can be prepared in just a few minutes using a microwave oven. Here's a simple recipe to make a delicious microwave veggie curry:

Ingredients:

  • 1 cup mixed vegetables (carrots, beans, peas, corn, etc.)
  • 1 onion, chopped
  • 2-3 garlic cloves, minced
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder (optional)
  • Salt to taste
  • 1/2 cup tomato puree
  • 1/2 cup water
  • 1 tbsp chopped coriander leaves

Instructions:

  1. Wash and chop the mixed vegetables into small pieces.
  2. In a microwave-safe bowl, heat the oil for 30 seconds on high power.
  3. Add the cumin seeds and microwave for 30 seconds on high power.
  4. Add the chopped onion and garlic, and microwave for 2 minutes on high power.
  5. Add the chopped vegetables, coriander powder, turmeric powder, red chili powder (if using), and salt. Mix well and microwave for 3 minutes on high power.
  6. Add the tomato puree and water. Mix well and microwave for 5-6 minutes on high power, stirring every 2 minutes.
  7. Garnish with chopped coriander leaves and serve hot with rice or naan.

Note: The cooking time may vary depending on the wattage of your microwave oven. Adjust the cooking time accordingly.
