Potato Soup

Simple and tasty recipe for potato soup:
Ingredients:
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable or chicken broth
- 1 cup milk
- 1/4 cup sour cream
- Salt and pepper to taste
- Fresh chives or parsley, chopped (optional, for garnish)
Instructions:
- In a large pot, sauté the onion and garlic over medium heat until softened and fragrant, about 5 minutes.
- Add the diced potatoes and broth to the pot and bring to a boil. Reduce the heat to low and simmer for 20-25 minutes, or until the potatoes are tender.
- Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
- Stir in the milk and sour cream, and season with salt and pepper to taste.
- Heat the soup over low heat for a few minutes until warmed through.
- Serve the potato soup hot, garnished with fresh chives or parsley, if desired.
