Potato Soup

Simple and tasty recipe for potato soup:

Ingredients:

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • Fresh chives or parsley, chopped (optional, for garnish)

Instructions:

  1. In a large pot, sauté the onion and garlic over medium heat until softened and fragrant, about 5 minutes.
  2. Add the diced potatoes and broth to the pot and bring to a boil. Reduce the heat to low and simmer for 20-25 minutes, or until the potatoes are tender.
  3. Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
  4. Stir in the milk and sour cream, and season with salt and pepper to taste.
  5. Heat the soup over low heat for a few minutes until warmed through.
  6. Serve the potato soup hot, garnished with fresh chives or parsley, if desired.
