Xian Cold Skinned Noodles
Xian cold-skinned noodles, also known as Liangpi, is a popular Chinese dish originating from the Shaanxi province. It consists of thin, chewy noodles served cold with a flavorful sauce and various toppings. Here's a recipe for Xian cold-skinned noodles:
Ingredients:
For the noodles:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 3/4 cup water
For the sauce:
- 3 tablespoons soy sauce
- 2 tablespoons Chinese black vinegar (or substitute with balsamic vinegar)
- 1 tablespoon chili oil (adjust to your spice preference)
- 1 tablespoon sesame oil
- 1 tablespoon sugar
- 1 clove garlic, minced
- 1 teaspoon grated ginger
For the toppings (optional):
- Sliced cucumbers
- Bean sprouts
- Shredded carrots
- Thinly sliced tofu
- Chopped green onions
- Chopped cilantro
- Crushed peanuts
Instructions:
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while stirring with a fork or chopsticks until the mixture comes together into a dough.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic. Shape it into a ball, cover with a damp cloth, and let it rest for 30 minutes.
- After resting, divide the dough into 4 equal portions. Take one portion and roll it out into a thin, flat circle on a floured surface. Dust both sides with flour to prevent sticking. Repeat with the remaining portions.
- Prepare a steamer and place one of the rolled-out dough circles onto a greased plate or steaming rack. Steam it for about 3-4 minutes until cooked and translucent. Remove and repeat with the remaining dough circles. Let the steamed noodles cool.
- While the noodles are cooling, prepare the sauce. In a bowl, combine soy sauce, Chinese black vinegar, chili oil, sesame oil, sugar, minced garlic, and grated ginger. Stir well to combine.
- Once the noodles have cooled, cut them into thin, wide strips. You can cut them into bite-sized pieces or leave them longer if preferred.
- In a large bowl, combine the cold noodles with the sauce. Toss gently to coat the noodles evenly.
- Add your desired toppings such as sliced cucumbers, bean sprouts, shredded carrots, tofu, green onions, cilantro, and crushed peanuts. Mix everything together.
- Serve the Xian cold-skinned noodles immediately, or refrigerate them for a while to let the flavors meld together.
Xian cold-skinned noodles are typically enjoyed as a refreshing dish during hot summer days. They can be served as a light lunch or dinner. Adjust the sauce ingredients according to your taste preferences, adding more or less chili oil for spiciness. Enjoy the cool and flavorful combination of the noodles and toppings!
