Bitter-sweet onions

INGREDIENTS

  • Red onions
  • 1l white wine vinegar
  • 1l water
  • 200g sugar
  • 200ml olive oil
  • 10g salt

METHOD

1. Peel an onion. Cut off both ends and remove a few layers from each onion.

2. Pour water into a pot, add sugar, and mix.

3. Add vinegar and bring to a boil. Put all the onions in the water and cook for 5 minutes.

4. Remove the onions. Add oil and mix.

5. Place the onions in glass jars. Fill with liquid from the pot.
