NAVRATAN KORMA - I am back with yet another super popular restaurant style Mixed Veg recipe. Do try it and let me know which one's your favourite so far..

Ingredients

For Navratan Korma

  • 2 ┬╜ tbsp Ghee, рдШреА
  • ┬╜ tsp Cumin seeds, рдЬреАрд░рд╛
  • 2 medium Potatoes, cut into cube, рдЖрд▓реВ
  • 2 medium Carrots, peeled, cut into diced, рдЧрд╛рдЬрд░
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 1 no. Green chili (less spicy & broken into half) рд╣рд░реА рдорд┐рд░реНрдЪ
  • 1 ┬╜ cups Cauliflower, medium size florets, рдлреВрд▓рдЧреЛрднреА
  • 1 inch Ginger, chopped, рдЕрджрд░рдХ
  • 1 no. Green chili (less spicy & broken into half) рд╣рд░реА рдорд┐рд░реНрдЪ
  • ┬╝ cup Green peas, рд╣рд░реА рдордЯрд░
  • ┬╜ tsp Turmeric powder, рд╣рд▓реНрджреА рдкрд╛рдЙрдбрд░
  • ┬╜ tsp Coriander powder, рдзрдирд┐рдпрд╛ рдкрд╛рдЙрдбрд░
  • ┬╝ tsp Degi red chili powder, рджреЗрдЧреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 1 cup Curd, beaten, рджрд╣реА
  • 12-15 no. French beans, chopped, рдлреНрд░реЗрдВрдЪ рдмреАрдВрд╕
  • ┬╜ cup Water, рдкрд╛рдиреА
  • 2 tbsp Cashew Paste, рдХрд╛рдЬреВ рдХрд╛ рдкреЗрд╕реНрдЯ
  • Toasted nuts & paneer, рднреБрдиреЗ рд╣реБрдП рдореЗрд╡реЗ рдФрд░ рдкрдиреАрд░

For Toasted Nuts & Paneer

  • 1 tsp Ghee, рдШреА
  • 1 ┬╜ tsp Oil, рддреЗрд▓
  • 200 gms Paneer, cut into medium cube, рдкрдиреАрд░
  • 6-7 Almonds, рдмрд╛рджрд╛рдо
  • 6-7 Cashewnut, рдХрд╛рдЬреВ
  • ┬╜ tsp Cumin seeds, рдЬреАрд░рд╛
  • A pinch of asafoetida, рд╣реАрдВрдЧ
  • ┬╝ tsp Degi red chili powder, рджреЗрдЧреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░
  • 1 tsp Dry fenugreek leaves, crushed, рдХрд╕реВрд░реА рдореЗрдереА

For Garnish

  • Pomegranate pearls, рдЕрдирд╛рд░ рдХреЗ рджрд╛рдиреЗ
  • Coriander sprig, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛

Process

For Navratan Korma

  1. In a deep shallow handi, add ghee, once it's hot, add cumin seeds and let it splutter.
  2. Add potatoes, carrots, salt to taste, green chili and saute for 2-4 minutes.
  3. Add cauliflower, ginger, green chili, green peas and saute well on medium flame.
  4. Add turmeric powder, coriander powder, degi red chili powder and salt to taste and saute it for 2-4 minutes until the masala is cooked well.
  5. Add curd, french beans, water and let it cook for 4-5 minutes.
  6. Add cashewnut paste and mix well.
  7. Finish it with tossed nuts and paneer.
  8. Transfer it to a serving dish and garnish it with pomegranate pearl, coriander sprig.
  9. Serve hot with roti.

For Toasted Nuts & Paneer

  1. In a pan, add ghee, oil, once it is hot, add paneer, almonds, cashewnut, cumin seeds, a pinch of asafoetida, degi red chili powder, dry fenugreek leaves and toss it well.
  2. Keep it aside for further use.
