Salzburger Nockerl

How to make it super fluffy with just a few ingredients!


  • 2 egg yolks
  • 30g (2 1/2 tbsp) + 70g (1/4 cup) of sugar
  • Lemon (zest)
  • 20g (1/4 cup) of all-purpose flour
  • 7 egg whites
  • A pinch of salt
  • Butter for greasing
  • 30ml (2 tbsp) of milk
  • Powdered sugar


1. In a bowl add the egg yolks, sugar, lemon (zest), and all-purpose flour and whisk until is combined well.

2. In a mixing bowl add the egg whites, salt and gradually add the sugar and mix with the electric mixer. Mix the egg whites until stiff.

3. Add the egg yolks to the egg whites and mix with the spatula being careful not to disassemble the egg whites, and tie the two compounds together.

4. Grease the baking dish with the butter and pour the milk. With the help of the dough cutter start with creating the mountains.

5. Transfer to the oven and bake at 200°C/392°F for 10-12 minutes. Once removed from the oven decorate with powdered sugar and serve.
