Creme caramel pudding cake
INGREDIENTS
For the flan:
- 140g (2/3 cup) sugar
- 4 eggs
- 2 yolks
- 1 tsp vanilla extract
- 700ml (3 cups) milk
For the sponge cake:
- 2 egg whites
- 30g (2 tbsp) sugar
- 2 yolks
- 2 tbsp vegetable oil
- 40ml (1/5 cup) milk
- 60g (1/2 cup) flour
- 2g baking powder
- 2g baking soda
For the caramel:
- 75g (6 tbsp) sugar
- 25ml (1 3/4 tbsp) hot water
METHOD
1. In a pan on low medium heat make the caramel and transfer it to the baking pan.
2. In a bowl mix together eggs with sugar, add milk transfer the mixture onto the caramel.
3. In another bowl mix together eggs with milk, oil, flour, baking powder, and soda.
4. Top the cake with it. Bake in hot water for 40 minutes at 160’C (320’F).
