Fluffy Mixed Berries Cake


15cm square Cake Pan or round Cake Pan

  • 2 Eggs 100g
  • 60g Granulated sugar
  • 30g Oil(or Vegetable oil ,grape seed oil ets)
  • Vanilla oil
  • 100g Flour
  • 3g Baking powder
  • 15g Milk

*Topping: 65g Mixed Berries



Line the cake pan with parchment paper.

Preheat the oven to 338 °F/170℃.

①Put egg in a large bowl. Beat it lightly until watery.

②Add the sugar in 2 parts and whisk the egg with an electric mixer.

If it becomes a little whitish, it is OK.

③Add oil little by little and mix. Add Vanilla oil.

④Sift flour and baking powder and add in two parts.

⑤Finally, add milk and mix.

⑥Pour it into the cake pan.

⑦Top with the mixed berries.

⑧Bake at 338 °F/170℃ for 26minutes.

⑨Drop the tray to prevent the cake from shrinking.

⑩Remove from the cake pan cover the top with a parchment paper and let cool.
