Chocolate Pot de Crème is a rich and creamy French dessert made with chocolate, eggs, sugar, and cream. It has a smooth and velvety texture, similar to a thick custard or pudding. Here's a recipe to guide you in making Chocolate Pot de Crème:
Ingredients:
- 8 ounces semisweet or bittersweet chocolate, finely chopped
- 4 large egg yolks
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 1/2 cups heavy cream
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- Whipped cream, chocolate shavings, or berries for garnish (optional)
Instructions:
- Preheat your oven to 325°F (165°C). Place six ramekins or small heatproof dishes into a baking pan or roasting pan.
- Place the finely chopped chocolate in a heatproof bowl.
- In a separate bowl, whisk together the egg yolks, granulated sugar, and salt until well combined.
- In a saucepan, heat the heavy cream and milk over medium heat until it reaches a gentle simmer. Remove from heat and stir in the vanilla extract.
- Slowly pour the hot cream mixture over the chopped chocolate, allowing the chocolate to melt. Let it sit for a minute to soften the chocolate further, and then gently whisk until smooth and well combined.
- Gradually pour the chocolate mixture into the egg yolk mixture, whisking continuously to prevent the eggs from curdling.
- Place a fine-mesh sieve over a large measuring cup or bowl and strain the mixture to remove any lumps.
- Divide the strained mixture evenly among the ramekins in the baking pan.
- Carefully pour hot water into the baking pan, creating a water bath that comes about halfway up the sides of the ramekins.
- Transfer the baking pan to the preheated oven and bake for about 30-35 minutes, or until the edges of the pot de crème are set but the centers are still slightly jiggly.
- Remove the baking pan from the oven and carefully remove the ramekins from the water bath. Let them cool to room temperature, and then refrigerate for at least 2 hours or until chilled and set.
- Serve the chilled pot de crème on its own or garnish with whipped cream, chocolate shavings, or fresh berries if desired.
