Ingredients:

  • 8 ounces semisweet or bittersweet chocolate, finely chopped
  • 4 large egg yolks
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups heavy cream
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 325°F (165°C). Place six ramekins or small heatproof dishes into a baking pan or roasting pan.
  2. Place the finely chopped chocolate in a heatproof bowl.
  3. In a separate bowl, whisk together the egg yolks, granulated sugar, and salt until well combined.
  4. In a saucepan, heat the heavy cream and milk over medium heat until it reaches a gentle simmer. Remove from heat and stir in the vanilla extract.
  5. Slowly pour the hot cream mixture over the chopped chocolate, allowing the chocolate to melt. Let it sit for a minute to soften the chocolate further, and then gently whisk until smooth and well combined.
  6. Gradually pour the chocolate mixture into the egg yolk mixture, whisking continuously to prevent the eggs from curdling.
  7. Place a fine-mesh sieve over a large measuring cup or bowl and strain the mixture to remove any lumps.
  8. Divide the strained mixture evenly among the ramekins in the baking pan.
  9. Carefully pour hot water into the baking pan, creating a water bath that comes about halfway up the sides of the ramekins.
  10. Transfer the baking pan to the preheated oven and bake for about 30-35 minutes, or until the edges of the pot de crème are set but the centers are still slightly jiggly.
  11. Remove the baking pan from the oven and carefully remove the ramekins from the water bath. Let them cool to room temperature, and then refrigerate for at least 2 hours or until chilled and set.
  12. Serve the chilled pot de crème on its own or garnish with whipped cream, chocolate shavings, or fresh berries if desired.
