Sponge cake

Ingredients

  • 1 tsp = 5 ml, 1 Tbsp = 15 ml, 1 cup = 250 ml
  • 18 cm * 7 cm (7 inch * 2.75 inch) round pan
  • 4 eggs(room temperature)
  • 110 g (1/2 cup + 1 Tbsp) granulated sugar
  • 110 g (3/4 cup + 2 Tbsp)cake flour
  • 1/3 tsp baking powder
  • 15 g (1 Tbsp) unsalted butter
  • 20 g (4 tsp) milk
  • 1 tsp vanilla extract(optional)

Things to note

* Preheat oven to 350°F (180°C) and bake at 340°F (170°C) for about 30 minutes.

* The egg consistency should hold the batter ribbon mark for at least 5 seconds.

* The melted butter mixture should be fairly warm, around 120°F or 50°C.

* After adding the butter mixture, proceed quickly without delay.

* As soon as you take it out of the oven, drop it on the table several times to quickly dissipate the hot heat.
