Today I want to show you how to make the best Chinese chicken salad with a tangy ginger dressing. This healthy Asian style salad recipe has crunchy toppings like baked wonton wrappers and almonds has a rainbow of tastes, textures and colors which makes each bite interesting and it's relatively easy to make.

INGREDIENTS

Salad Base

  • 230 grams napa cabbage
  • 20 grams scallions (chopped)
  • For Dressing
  • 2 tablespoons rice vinegar
  • 1 tablespoon vegetable oil
  • 1 tablespoon orange juice (or syrup from mandarins)
  • 2 teaspoons hoisin sauce
  • 2 teaspoons soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon grated ginger
  • 1 teaspoon salt
  • 1/2 teaspoon hot mustard

For Chicken

  • 4 cups water
  • 1 tablespoon salt
  • 250 grams chicken tenders

For Crunch

  • 40 grams almonds sliced
  • 6 wonton wrappers
  • 1 teaspoon toasted sesame oil
  • pinch salt

Other Toppings

  • 100 grams red cabbage (shredded)
  • 130 grams canned mandarins (drained)
  • 50 grams carrot (peeled and shredded)
  • 30 grams cilantro (leaves picked from stems)
