Chinese Chicken Salad

Today I want to show you how to make the best Chinese chicken salad with a tangy ginger dressing. This healthy Asian style salad recipe has crunchy toppings like baked wonton wrappers and almonds has a rainbow of tastes, textures and colors which makes each bite interesting and it's relatively easy to make.
INGREDIENTS
Salad Base
- 230 grams napa cabbage
- 20 grams scallions (chopped)
- For Dressing
- 2 tablespoons rice vinegar
- 1 tablespoon vegetable oil
- 1 tablespoon orange juice (or syrup from mandarins)
- 2 teaspoons hoisin sauce
- 2 teaspoons soy sauce
- 1 teaspoon toasted sesame oil
- 1 teaspoon grated ginger
- 1 teaspoon salt
- 1/2 teaspoon hot mustard
For Chicken
- 4 cups water
- 1 tablespoon salt
- 250 grams chicken tenders
For Crunch
- 40 grams almonds sliced
- 6 wonton wrappers
- 1 teaspoon toasted sesame oil
- pinch salt
Other Toppings
- 100 grams red cabbage (shredded)
- 130 grams canned mandarins (drained)
- 50 grams carrot (peeled and shredded)
- 30 grams cilantro (leaves picked from stems)
