Ingredients:

  • 2 whole egg (1 used for breading)
  • 2 cups bread crumbs
  • 4 tbsp chopped parsley
  • 1 tbsp chopped thyme
  • (1 whole egg for breading)
  • 1 cup ap flour
  • salt and pepper to taste
  • 2 cups fresh asparagus trim (chopped asparagus)
  • 1 cup water
  • 1 tbsp apple cider vinegar (or lemon juice)
  • 1 tbsp onion powder
  • 1 cup asparagus spears, sliced
  • 2 tbsp olive oil
  • salt and pepper to taste
  • vegetable oil for frying
