3-colour brioche rolls

INGREDIENTS

  • 500g (4 cups +2 tbsp) flour
  • 250ml (1 cup) lukewarm milk
  • 7g dry yeast
  • 100g (½ cup) sugar
  • 60 g of butter
  • a pinch of salt
  • 2 tsp cocoa powder
  • 1 tbsp milk
  • 2 tbsp coffee
  • 1 egg yolk

METHOD

1. In a bowl mix together warm milk with sugar and yeast, and add in flour, butter, and salt. Let it rise for 2 hours.

2. Divide the dough into 3 portions add the cocoa mixture to the first and the coffee to the second. Let all dough rise for 30 minutes.

3. Roll out dark dough, and cover with white dough and coffee dough.

4. Roll it and cut into slices, transfer it to the baking pan, and rest for 20 minutes.

5. Spread with egg yolk and bake at 180°C (360°F) for 20 minutes.
