Duchess potatoes Christmas tree

INGREDIENTS

  • 3 potatoes
  • 240ml (1 cup) of water
  • 1 egg yolk
  • 50g (1/2 cup) of parmesan
  • 60g of basil pesto
  • Cheese

METHOD

1. Put the potatoes in a baking dish, prick them and add a glass of water. Cover with microwave-safe cling film and microwave for 12 minutes.

2. After time has elapsed peel them and place them in a large bowl. Mash the potatoes with a fork, and add the egg yolk, pesto, and parmesan. Mix all the ingredients well.

3. With the help of a sac à poche, form the trees on the baking tray covered with parchment paper.

4. Transfer to the oven and bake at 180°C/360°F for 15 minutes. Let the potatoes cool.

5. Make little stars from the soft cheese, stick them with toothpicks and place them on the trees.
