Hot Chicken Eggs Benedict

I've been seeing variations of this on a few menus around Nashville and it was only a matter of time before I took a stab at it... Let me tell you, it is REAALLYY good. Just an absolutely perfect breakfast/brunch item on any menu anywhere. I hope you guys try this out and let me know what you think about it in the comments below!

Ingredients:

  • 1 whole egg
  • 1/2 chicken breast (pounded)
  • 1/2 cup milk
  • 2 tbsp sour cream
  • 5 tbsp paprika, 2 tbsp cayenne pepper, 1 tbsp Aleppo pepper, 2 tbsp onion powder (split between flour, buttermilk, and glaze)
  • 1 cup ap flour
  • 2 cups frying oil of choice
  • 1 tbsp brown sugar
  • 1 tbsp honey
  • 4 tbsp pickle juice
  • thick sliced dill pickles

Hollandaise:

  • 1 egg yolk
  • 4 oz cold butter
  • 2 tsp lemon juice
  • 1 tsp cayenne pepper
  • add water for consistency
  • salt to taste
