Hot Chicken Eggs Benedict

I've been seeing variations of this on a few menus around Nashville and it was only a matter of time before I took a stab at it... Let me tell you, it is REAALLYY good. Just an absolutely perfect breakfast/brunch item on any menu anywhere. I hope you guys try this out and let me know what you think about it in the comments below!
Ingredients:
- 1 whole egg
- 1/2 chicken breast (pounded)
- 1/2 cup milk
- 2 tbsp sour cream
- 5 tbsp paprika, 2 tbsp cayenne pepper, 1 tbsp Aleppo pepper, 2 tbsp onion powder (split between flour, buttermilk, and glaze)
- 1 cup ap flour
- 2 cups frying oil of choice
- 1 tbsp brown sugar
- 1 tbsp honey
- 4 tbsp pickle juice
- thick sliced dill pickles
Hollandaise:
- 1 egg yolk
- 4 oz cold butter
- 2 tsp lemon juice
- 1 tsp cayenne pepper
- add water for consistency
- salt to taste
