Savory fritters

INGREDIENTS

  • 400g (3 1/4 cups) of flour
  • 12g of fresh yeast
  • 360ml (1 1/2 cups) of water
  • 12g (3/4 tbsp) of salt
  • 13ml (1 tbsp) of olive oil
  • Cherry tomatoes
  • Taggiasca olives
  • Oil for frying

METHOD

1. In a bowl add the flour, yeast, water, salt, and olive oil and mix until all is well combined. Add the cherry tomatoes, and olives and mix again.

2. Cover the bowl with the cling film and let it rise for 2 hours, or until it doubles in volume.

3. Take the batter with a spoon and add to the pan with hot oil. Fry the fritters until they are brown.
