Kala Masala Roasted Chicken Ingredients:
For the Spice-Mix
- 3 Onions (sliced)
- 1 tbsp Oil
- 1 cup Desiccated Coconut
- 1 tbsp Ginger Paste
- 1 tbsp Garlic Paste
- 1 tbsp Green Chillies Paste
- 1 tsp Turmeric Paste
- 1 tbsp Red Chilli Powder
- 1 tbsp Kala Masala (find the recipe below)
Marinating the Chicken
- 1 cup Yogurt
- Salt (as per taste)
- Juice of 1/2 Lemon
- 7 Chicken Drumsticks
- Frying the Chicken
- 1/4 cup Oil
KALA MASALA RECIPE:
- 5 gm Star anise
- 10-gram Javitri
- 15-gram Black pepper
- 15-gram Cloves
- 10 gram Bay leaves
- 15 gram Cinnamon
- 10-gram Black cardamom / Masala velachi
- 5 gram dry Ginger
- 10 gram Stone flower
- 10-gram Trifala
- 10-gram Black cumin seeds
- 15-gram white Sesame seeds
- 10 gram Poppy seeds
- 3 pieces of Halkund
- 100-gram grated dry Coconut
- 200-gram Coriander seeds
- 100-gram Dry red chili (Guntur / Lavangi mirachi)
- Oil
** Fry each ingredient on a low flame till it leaves and aroma then cool and grind to a powder
