Christmas cocktails

Okay, I know these cocktails are a fair stretch to refer to them as "Christmas cocktails" but in Australia it's hot and we don't really make your typical Christmas spice cocktails. The weather is forecast to be 31-41 degrees celsius (88-106 f) over the next 3 days so we make nostalgic summer cocktails.

WATERMELON MARGARITA

- 2 oz / 60 ml mezcal

- 0.75 oz / 22.5 ml acidulated watermelon

- 0.75 oz / 22.5 ml orange liqueur (dry curacao)

- dash of agave nectar

- 3 drops of 20% saline solution

LEMONCELLO SPRITZ

- 2 oz / 60 ml lemoncello

- 2 oz / 60 ml prosecco

- 3 oz / 90 ml soda water

- pinch of salt

- squeeze of lemon juice

RHUM PUNCH

- 1 oz / 30 ml aged rhum agricole

- 0.75 oz / 22.5 ml light-bodied red wine

- 0.5 oz / 15 ml lemon juice

- 0.25 oz / 7.5 ml gum syrup

LION’S TAIL

- 2 oz / 60 ml bourbon whiskey

- 0.5 oz / 15 ml allspice dram

- 0.5 oz / 15 ml lime juice

- 1 tsp simple syrup

- 2 dashes Angostura bitters
