Ingredients:
- 2 turkey legs
- 2 cups celery (large cuts)
- 2 cups carrots (large cuts)
- 1 whole onion (quartered)
- 4 garlic cloves
- 2 bay leaves
- 2 sprigs rosemary & thyme
- 1 bunch parsley (torn)
- 2 cups red wine
- 4 cups water
- salt and pepper to taste
- 4-5 large Yukon gold potatoes
- 1/2 cup melted butter
- salt and pepper to taste
- 3 tbsp chopped scallions
- 3 tbsp chopped parsley
