Takeout Chicken Fried Rice

Takeout chicken fried rice is made with tender and flavorful chicken, bits of eggs, veggies sautéed in sesame oil, and tossed with perfectly cooked rice and soy sauce — you can’t go wrong!

Ingredients

• 1 pound boneless skinless chicken breasts cubed into 1/2 inch pieces
• 2 tablespoons cooking oil
• 2 tablespoons sesame oil
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon ground ginger
• 1 1/2 cup frozen peas and carrots
• 2 tablespoons garlic minced
• 4 large eggs beaten
• 1/2 cup green onions chopped
• 4 cups cooked rice
• 1/4 cup soy sauce regular or low sodium

Instructions

  1. Cube chicken into 1/2 inch pieces.
  2. Add cooking oil and sesame oil to a large skillet or wok over medium high heat, add in cooking oil and sesame oil. Once heated, add in chicken and season with salt, pepper, and ginger. Saute and cook for 5-7 minutes.
  3. Reduce heat to low, remove chicken, and set aside. Add carrots and peas to the skillet and let sauté for about 2 minutes.
  4. Add in minced garlic and let saute for about 1 minute.
  5. Slide vegetables to the side. Pour in eggs and cook alongside the sautéed vegetables.
  6. Drop the heat to medium-low and add the cooked chicken, rice, and green onions. Stir carefully to combine.
  7. Drizzle with soy sauce and let heat thoroughly.
  8. Serve hot and enjoy!
