Whipped shortbread cookies with chocolate

INGREDIENTS

  • 110g (1/2 cup) of butter (soft)
  • 75g (1/4 cup) of sugar
  • 40g (1/4 cup) of greek yogurt
  • 10ml (3/4 tbsp) of heavy cream
  • Vanilla extract
  • A pinch of salt
  • 140g (1 1/4 cups) of all-purpose flour
  • 100g of dark chocolate (melted)

METHOD

1. In a bowl add the butter and sugar and mix with the electric mixer until the sugar dissolve and the butter becomes creamy.

2. Add the greek yogurt, heavy cream, vanilla extract, salt, and sifted flour and mix with the mixer. At the end mix with a spatula and mix until well combined and soft.

3. Fill in the piping bag with the mixture a spread the mixture on the baking tray covered with parchment paper forming the shape. Transfer to the fridge and let them rest for 2 hours.

4. After time has elapsed transfer the cookies to the oven and bake at 180°C/360°F for 10-12 minutes until golden brown

5. Let the cookies cool completely and dip them in chocolate.
