Fried krapfen with jam


  • 310g (2 1/2 cups) of all-purpose flour
  • 7g of dry yeast
  • 25g (2 tbsp) of sugar
  • 125ml (1/2 cup) of milk (lukewarm)
  • 2 egg yolks
  • 1/2 tsp of salt
  • 55g (1/4 cup) of butter
  • Oil for frying
  • Sugar
  • Strawberry jam


1. In a bowl add the flour, yeast, sugar, milk (lukewarm), egg yolks, and salt, and mix. When the dough starts to form knead it with your hands.

2. Add the butter and continue with kneading to obtain the smooth dough. Cover with cling film and let it rise for 1 hour, or until doubles in volume.

3. After time has elapsed transfer the dough to the working surface and split it into 8 equal pieces. Form the balls (about 60 grams) and transfer them to the baking tray covered with parchment paper. Cover with a cloth and let them rise for 2 hours.

4. After 2 hours transfer the donuts to the pan with hot oil and fry until they are golden brown on both sides and they are nice and fluffy.

5. Cover the donuts with sugar, fill them with strawberry jam and serve.
